Chia seed pudding with raspberry yogurt
I wrote about this in my latest journal entry, but I want to make a standalone post because I'm so excited about it haha. Plus, given the look of the yogurt, I thought it would be fun to use this as a chance to apply my cute pink/white theme to a dedicated post like I do with my trans blog posts.
Anyway, I've been experimenting with chia seed pudding. I really like overnight oats but sometimes that's just too much; I've also taken to eating hot oatmeal every morning with peanut butter, cream cheese, and chocolate chips, and there is a thing as too much oats.
Chia seed pudding seems like the same sort of deal, a nice and simple treat that I can make in advance really quick. It also adds a lot of fiber to my diet which is always a good thing!
My first go at it involved following a recipe from the Everything Vegan Meal Prep Cookbook, which I'll share here:
Banana Chia Seed Pudding
- 1 and 1/2 cups plant based milk
- 1 medium banana, peeled
- 2 tsp stevia (I use agave nectar)
- 1/2 cups chia seeds
- 1/2 tsp vanilla extract
- 1/4 cup granola
You basically just blend everything together, let it set in the fridge overnight, and then throw some granola on top in the morning to eat it.
I really liked it but I wanted to try something more plain so I could switch out different toppings, since not everything pairs well with banana.
I found this recipe online and gave it a go. I ended up really enjoying the final product! It's so yummy and sweet, but not too sweet considering the raspberries are a little tart. The texture of the pudding was nice too, it reminds me of boba tea sort of.
I ended up with a huge clump of chia seeds that sank to the bottom though, and it isn't as ☆ ♡ creamy ♡ ☆ as the banana chia seed pudding. I'm not sure of what to add that would thicken it up. If you have ideas, shoot me an e-mail at xavier@xavierhm.blog!
Here's the recipe:
High Protein Chia Pudding
Pudding:
(The original website lists the bulk ingredient quantities, but I've just divided it according to how much is used per jar.)
- 3 tbsp chia seeds
- 3/4 cup milk
- 1/2 vanilla extract (YMMV, I didn't have any on hand and it tasted just fine)
- 2 tsp of maple syrup (again, I used agave nectar)
Raspberry yogurt:
- 1 1/2 cup yogurt
- 2 tbsp vanilla protein powder
- 3/4 cup raspberries
And here is what I used to make it:
- Planet Oat milk, original
- Great Value organic chia seeds
- Great Value honey & oats granola
- Vega Simple vanilla protein powder
- Madhava agave nectar
- Simple Truth vanilla almond milk yogurt alternative
- raspberries
- Ball 1 pint nested mason jars
- (most importantly) ❤ ❤ ❤ good vibes ❤ ❤ ❤
I will definitely be making these a lot. If I end up trying out new flavors of yogurt or add more toppings, I'll update with another post!
